Shashlik w/ Dakota Beef (cue Aaron Copland — see just below)



In response to AI's little question (see link), of course I didn't use Russian lamb or berbec. Think local, AI. Think cattle country, the American West, the high Plains. I'm not one to romanticize much, let alone the American West, but damn Copland got that piece right.



Since he's from Tejas, JJ has street cred here too.

The final photo is of the marrow bones I roasted in the oven last Friday. Dakota beef, Raised, butchered, and sold within a 10 mile radius of central northern Dakota. Anthony Bourdain refers to roasted bone marrow on good toast with parsley salad and capers as his Death Row Meal (that was the inspiration).



AI, it looks like ND branded beef has some lamb for sale. I'll ask them about berbec meat proper next time.

AA, yes, but I'll have to put on some crappy French tunes, or great American blues, if Pepe ever makes it up to my table (you're all invited: every last one of you great fuckers). Pepe, bring some bourbon. AA, let's get some Portuguese vino. AI needs to see about shipping in fresh berbec. And JJ can bring the Russian babes. We'll need about 10, JJ.

I think I've discussed this before, mft. Porchetta is the Roman bbq. Coincidentally, it is brought into my neighborhood Tuesdays from Ariccia up in the hills out of Rome, so I lunched on the stuff just now, with a bottle of Barolo to join it. OK, the Barolo is from Piemonte so diesn't go, but was wonderful just the same and in the cupboard.

It is out of this world. If I had money to invest, I would open a porchetta stand in NYC. I would own Manhattan in a couple weeks.

Wiki has something about Ariccia I learned things from just now. Never been there, but I have been up in the Castelli surrounding. Beautiful place.

JJ, if we ever get enough monetary scrapings together, let's look into opening one of these outfits.

AI, while in Vegas, I found my melancholy slipping into full-on depression, and the booze only worked for so long. You can take mft outta Dakota, but it's likely he's gonna come back.

I think it would make us all rich. We could try in Cambridge, where I know ppeople that could help, but we'd have to make the porchetta out of mung beans and soy.
